Spanish food. Two recipes of the day

Today for dinner I made Spanish rice with chicken breast that was left over from yesterday in it. I tend to always use the left overs because I don't like to see anything being wasted. I also made beans on the side. Enjoy the recipe (after the photos for each dish)

Chicken Rice: 

Used two cups of rice 
3 cups water 
Left over chicken breast meat that was made in the crockpot yesterday but you can use fresh chicken breast cut up 
1 tablespoon of garlic 
2tablespoons of olive oil 
2 tablespoons of sofrito 
1 tablespoons tomato paste 
Pinch of paprika 
Adobo seasoning to taste1 envelope of sazon
Leave it uncovered till it dries 
Once dried stir. Lower flame to lowest possible and let it steam cook till tender about 30 more minutes 


My stewed beans: 

1 can pink beans 
Half a can of carrots or cut fresh ones 
1/3 cup of water 
1/4 cup of tomato sauce
1 tablespoon garlic minced 
1 tablespoon olive oil 
Half an onion
1teaspon paprika, cumin, black pepper
1 tablespoon sofrito 
1 envelop of sazon
Let it cook for 30 minutes on low heat. 
Stir every 15 mins to prevent sticking

recipe- polvorones & vegan chocolate cake

It's a snow day over here so I decided to make some yummy treats for the kiddies.
First up some delicious spanish POLVORONES. It is basically like a sugar cookie that is super popular in the spanish culture. I used to have em a lot in Puerto Rico and so I searched online and boom found this recipe. Enjoy!

1 cup vegetable shortening
1 cup sugar
1/8 tsp of salt
1 egg
1 tbs of butter
3 cups of flour

mix the shortening and eggs until creamy. add the egg, butter and salt and mix. sift the 3 cups of flour while mixing with your mixer. roll em up into balls and bake at 350 for 15/20 minutes.

1 and 1/4 cup of all purpose flour
1 cup sugar
1/3 cup of cocoa powder
1 tsp baking soda
1/2 tsp salt
1/3 cup vegetable oil
1 cup warm water


mix all ingredients together and make 2 cakes or a dozen cupcakes whichever you prefer.





I staked the cakes and put NUTELLA in the middle with butter cream frosting.
